I am often amazes at the lack of nutrition in kids' school lunches. To prove this point I collected trash from my son's class lunch. (The kids thought I was crazy, but they helped me out.) The analysis (yes I can do math too) was plenty of protein and salt, but only 2% of the recommended intake of fiber and hardly and vitamin C. Basically there wasn't any fruits or veggies consumed. An unexpected result was the large amount of trash I had. Almost everything was in pre-wrapped, disposable packaging. The school also uses DISPOSABLE styrofoam trays and silverware. Landfills beware!
